More info
Peru, Maribel Chavez (Natural Process)
We taste sweet tobacco and watermelon rind, with medium acidity, and a full body.
Peru, High Altitude Micro-lots
This coffee is a combination of micro-lots from various high altitude regions of Peru, including Cusco, Pasco, and Cajamarca. Ranging from 4,600ft up to 6,400ft, the high altitudes give coffee plants a slower growth cycle, which prolongs the maturation period of the plants. This, combined with the better drainage at high elevation, leads to deeper and more complex flavors. Although these lots are considered past their prime (“past crop”), we carefully roast them to preserve the delicious qualities that were slow-grown on the mountainside. We taste notes of lemon, black tea, with a light body.
Nicaragua, Hacienda Las Mercedes, Jinotega
This farm estate (hacienda) is located in the foothills of the highest peaks in the region: Mount El Chimborazo and Mount Las Mercedes, with elevation of 4,600-5,200 ft. Although this coffee is considered past its prime (“past crop”), we carefully roasted it to preserve the delicious qualities that were slow-grown on the mountainside. The flavor profile is semi-sweet, with notes of toasted rice and low acidity.
Gasharu, Rwanda
Jean Christophe’s family entered the coffee business during a time of displacement in the mid 1990’s, a devastating period in Rwanda’s history. Now 30 years later, ‘Chris’ has been working hard to partner with coffee importers here in the US. When negotiating orders, there are occasional overstocks and coffee on hand that don’t sell as quickly as expected. We work together to agree on a fair price, and custom roast these coffee to preserve the fullest flavors from these ‘past crop’ beans. We taste chocolate, cinnamon, with a nice light citrus acidity.
Antioquia, Colombia
In the mountainside towns of Amaga and Titiribi, the Toborda-Rojas family has been growing coffee for generations. When each farm harvests and sorts their coffee, there is a portion that doesn’t meet the standard size due to a harmless defect. These are called ‘peaberry’, and are gathered from the family cooperative of farms, and sold together. The result is a non-uniform, yet still delicious, coffee bean, ready to be roasted and brewed.
